Pea and Ham Soup

    Step1

    Soak dried peas for 3 hours or leave to soak overnight

    Step2

    Place the ham hock into a large pan, cover in water and simmer until meat is tender (approx. 1 – 1 ½ hrs), strip meat and dice

    Dice onion, carrots and celery

    Step4

    Place meat and vegetables back into the pan adding vegetable stock if you wish, and bring to a boil, make sure there is always enough liquid to cover

    Simmer until the dried peas have almost disintegrated

    Step6

    Cool, then stir in milk and butter/margarine.

    Conclusion

    TIP: If using a pressure cooker, time for 20 minutes. If using a pot, takes about 40 minutes to simmer, or until vegetables (particularly dried peas) are cooked. Serve in bowls or mugs, with crusty bread.
